This recipe is a hit every time! I found this recipe many years ago in a Child magazine.
Favorite Oatmeal Cookies
2 eggs
1/2c brown sugar
1/4c canola oil
1c nonfat plain yogurt
1t vanilla
1c flour
1/2c whole wheat flour
1t baking soda
1/2t salt
1t cinnamon
4c oatmeal
8oz chocolate chips
3/4c cranberries
(other mix-ins to replace or add to the cookies)
Preheat oven to 350F. In a medium bowl, combine eggs, sugar, oil, yogurt, and vanilla. In a small bowl, whisk flour, baking soda, salt, and cinnamon. Whisk into egg-yogurt mixture. Add oatmeal, chocolate chips, and cranberries. Drop by rounded tablespoons onto nonstick baking sheets.
Bake 8-12 minutes until cookies are slightly firm and edges are brown. makes 36 cookies.
