This is from Amy's recipes, and again, is exactly how she likes to cook! Her stuff is DELISH, but mine would come out crummy! (mostly, because I'd add a ton of flax seeds, wheat germ and something strange like rutabega in mine!)
Mom's Pantry Cleaning Cookies
(named because I can usually clean out the dabs of stuff I have in the pantry with this recipe)
Cream together:
1/4 cup brown sugar
1/4 cup white sugar
1/4 cup of butter
1/2 of an egg (or 1 whole if you can't figure that out)
1/4 tsp. Vanilla
1/4 tsp. baking soda
1/4 cup flour
Add to that:
1/4 cup of dates
1/4 cup raisins (can use cranberries)
1/4 cup of chopped nuts
1/4 cup of coconut
1 cup of Oatmeal
(I have made this with cranberries, chocolate chips, pecans, walnuts, use anything you need to).
Drop onto cookie sheet and bake at 350 until set. This is 1/2 of a batch so it's perfect for a small family with no left overs!
Today it has: Cranberries, choc. Chips, coconut, oatmeal and marshmallows
