This is a super simple, tasty light dish. It's great as a side dish with grilled meats, or on top of greens, with some feta as a main dish salad. From the Moosewood cookbook.
White Bean and Tomato Salad
Ingredients
2 (15 ounce) cans cannellini beans
2 cloves of garlic
1/4 cup red onion (I like using a bunch of green onions, better)
6 celery ribs with leaves, sliced (optional)
1 lemon, juice of
2 tablespoons olive oil
1 tablespoon fresh mint or fresh basil or 1 teaspoon dried basil
4 tomatoes, cubed or 1 container of cherry tomatoes, halved
salt and pepper, to taste
Combine all ingredients in a bowl. Serve at room temperature.
