This is from the Moosewood Low Fat Cookbook. It's super easy, and if you chop it smaller, can be used as a yummy salsa!

Mango Coconut Cucumber Salad
Ingredients:
1 cucumber peeled, seeded and diced
1/2t. minced jalapeno (I omit so it's not too spicy, for the boys, but I think I'm going to start adding it!)
1T. fresh lime juice
1T. fresh lemon juice
2t. brown sugar
2T. dried coconut
1 mango peeled and diced
1 small red pepper diced
1/2 bunch chopped cilantro
Directions:
Mix all ingredients in a serving bowl.
Chill.
