Lemon buttercream frosting, and striped frosting




I made this as a 4th of July treat. I got the idea from this site.


Lemon Buttercream


Ingredients:

1 stick butter


3T lemon juice
3 3/4 cups sifted confectioners' sugar sifted


1t lemon zest

Makes: About 3 cups of icing.

Instructions:

In large bowl, mix butter with electric mixer. Add zest. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add lemon juice and beat at medium speed until light and fluffy.
