Bananas Foster Cupcakes


A friend is having a crawfish boil, so I decided to bring a little NOLA for dessert, my style...
(Edit: These were devoured, at the party! I even got applause! LOL! My buttercream didn't hold up well, in the humidity, but it was still yummy!!!)

Bananas Foster cupcakes

1 box yellow cake mix
1 c. mashed ripe banana (2 medium-I freeze my bananas that are about to go bad, and take them out as I need them)
1/3 c. water
3 eggs
2 tsp. vanilla
dried banana chips for decoration

In a medium bowl, dump all of the ingredients and mix for 30 seconds. Turn off the mixer and scrape down the sides. Mix for 1 minute more. Fill the liners 3/4 of the way full. Bake at 350F for 22 minutes or until a wooden toothpick comes out clean when you poke them.

Buttercream frosting for Bananas Foster Cupcake
8 tablespoons (1 stick) butter, at room temperature
2 cups confectioners' sugar, sifted
3 to 5 tablespoons milk
1 teaspoon pure vanilla extract
1/4 c light brown sugar
1/4 t cinnamon
1/2 t rum
1. Place the butter in a large mixing bowl. Blend with an electric mixer on low speed until the mixture is soft and well combined, 30 seconds. Stop the machine and add the confectioners' sugar, brown sugar, cinnamon, rum, 3 tablespoons of the milk, and the vanilla. Blend with the mixer on low speed until the sugar is incorporated, 1 minute. Increase the speed to medium and beat until light and fluffy, 1 minute more. Add 1 to 2 tablespoons more milk if the frosting is too stiff.
