C's Mac and Cheese

My friend's daughter found this recipe on You Tube.   I tried it, and loved it!  I have made it for the Cross Country team, and my own family.  Everyone devours it!  My son and I like it with hot sauce or red pepper flakes in it.  It's a healthier version of Macaroni and Cheese.

Cook 1 lb of macaroni noodles

1/2 C water
2 C cauliflower
1 C butternut squash, cubed
2 C carrot, sliced
Put a lid on the above veggies, in a pot, and cook until veggies are tender.

Blend when tender, return to the pot.

Add 2 C milk
2 C shredded cheddar cheese
4 oz light cream cheese
Stir until combined.
Add the 1 lb cooked macaroni, and stir until coated.
Put the lid on for 20 minutes, until warmed through.
