Banana Bread Cookies

These got the thumbs up, from my guys, as they munched away!  I made them, to go into lunchboxes. 

Ingredients
  • 3 large, ripe bananas
  • 1/2 cup granulated sugar (I only used 1/2 C and they are really sweet.)
  • 1 stick unsalted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup semisweet chocolate chips
Instructions
  1. Preheat your oven to 350 degrees and line a cookie sheet with parchment paper.
  2. Beat together the butter and sugar until light and fluffy, then add your eggs, vanilla and bananas.
  3. On low speed, mix in the flour, baking soda, and salt, until just combined. Stir in chocolate chips.
  4. Drop by tablespoonsful onto your lined cookie sheet, about 2 inches apart. Batter will be very wet - don't worry if you aren't able to form the dough into balls.
  5. Bake for 12-17 minutes, until the edges begin to turn a light golden brown.
