Green Tea Yogurt Cake

I made this, for the boys' lunches.  They LOVED it!  I omitted the frosting.

Ingredients
  • 2 cups all purpose Flour
  • 4 teaspoons Green Tea Matcha Powder
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • A pinch of Salt
  • 3 large Eggs
  • 1 cup Greek Yogurt
  • 1/2 cup neutral-flavored Oil
  • 1/2 cup white Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon ground flax seed

Instructions

  1. Preheat oven to 350F/180C. Generously grease a bundt pan. In a large bowl, whisk together the flour, Matcha powder, baking powder, baking soda and salt. Set aside.
  2. In another bowl, beat the eggs with the yogurt just until combined. Pour in the oil, sugar and the vanilla extract and mix together.
  3. Pour the wet ingredients into the dry mixture and stir to combine. 
  4. Transfer the batter to the prepared pan. Bake for about 35-40 minutes or until a tester inserted in the middle comes out clean or with only a few crumbs clinging to it. Let it cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Frost, if desired.
