Pumpkin Protein Cookies

When I made these, the boys said these were the best cookies I have sent them to school with!  Score!

Ingredients
  • 1 c. Pumpkin Puree
  • ¼ c. Applesauce
  • ½ tsp. Cinnamon
  • ½ tsp. Pumpkin Pie Spice
  • ¼ c. Vanilla Protein Powder (I used Cinnamon Graham Cracker.)
  • 1 T. Honey
  • 1 T. Molasses (I used coconut nectar.)
  • 2 c. Rolled Oats
  • ½ c. Dark Chocolate Chips
Instructions
  1. Heat oven to 300 degrees. Mix all of the ingredients in a bowl. Drop cookies onto a greased baking pan and push down a little bit. Bake for 15 minutes.
