Meringues


My kid was obsessed with unicorns, and had a unicorn theme party. I made unicorn farts as a goodie to go home with. 

I LOVE meringues.  They are so easy, to make, delicious, and much less fattening than cookies!
You can change the flavors with the seasons or your mood!  Add finely ground coffee beans for a coffee flavor, 4T of cocoa powder for chocolate, a dash of cinnamon, extracts (Kosher for Passover, if you are observing), gel food coloring, or a hint of finely shredded citrus peel.

Here's a Passover version, with no Cream of Tartar.  The salt fills in nicely.

Meringues 
3/4 c sugar
dash of salt
4 egg whites

Directions
  1. Preheat oven to 300 degrees F (150 degrees C). Line 2 baking sheets with parchment paper.Spray, lightly, with oil spray.
  2. In a large bowl, beat egg whites with an electric mixer until soft peaks begin to form. Mix in remaining 1/4 cup of sugar gradually, and beat until medium-firm peaks form. Drop (or pipe) mixture onto baking sheets by rounded teaspoonfuls, spacing about 1 inch apart. I added a chocolate chip or a sliver of almond, to some of mine, for variety.  You can do this, or sprinkle with sprinkles, too.
  3. Bake in preheated oven for 40 minutes for crispy cookies. Cool cookies on baking sheets.
