Moroccan Couscous

After a delicious meal, at a friend's house, I HAD to have her recipe. This is one of the easiest recipes.
Moroccan Couscous

1c couscous (then cook as per package directions)
onion, chopped
2 garlic, chopped
chicken (Tenderloins cook in shorter time, bone in cook longer. Take your pick. Oh, and take the skins off. I learned this.)
zucchini/yellow squash, cut in half then legnthwise
carrots, cut in half, then legnthwise, or baby carrots whole
turnip or rutabega, or potato, chopped
handful of spinach/parsley
handful of cherry tomatoes or chopped tomato
any other veggies you want (My friend said, that in Morocco, they use 7 vegetables.)
broth (I like vegetable, you can use chicken)
turmeric and or saffron (Whatever you have.)

Cook couscous per package in seperate pot.
Sautee onion and garlic in a bit of olive oil. When onion is translucent, add chicken, and harder veggies. Add broth to cover, shake of turmeric and cover pot. As chicken cooks, add other veggies, saving leafy ones for last. Cook until chicken is cooked through.
Serve in a large bowl, with couscous spread on the bottom, then veggies and chicken. Ladle broth on but not too soupy.
This is delicious with pita and hummus.
