Easy Tres Leches Cake

A friend, of mine, and her husband offered to make us delicious quesadillas, at our home.  "What can I provide?", I asked.  "Tequila and dessert", she said.  Done and done!
I wanted to make a tres leches cake, but an easy one, of course.  I made the cake and poured the milks on, the day before.  Then, I whipped the cream and frosted the cake, the day of the get together.
The photo isn't pretty, but we were cutting into it, when I realized I should take a photo.  It's good.  It's moist, easy, and I got approval, from 2 picky tres leche experts!

Tres Leches Cake

Ingredients

  • 1/2 cup applesauce
  • 1 cup water
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 1/2 pint whipping cream
  • 2 cups whipping cream
  • 1 box of French Vanilla cake mix
  • 1/4 c powdered sugar
  • ground cinnamon

Directions

  1. In a large bowl, make cake according to the box, replacing the oil with applesauce.
  2. Add vanilla and dash of cinnamon.
  3. Pour batter into baking dish and bake until top is golden brown and a toothpick inserted in center comes out clean, 30 to 35 minutes.
  4. In a medium bowl, whisk together the three milks.
  5. Poke warm cake all over with a wooden skewer or toothpick, then pour milk mixture over top of cake and let cool to room temperature, about 1 hour. Refrigerate, if not eating the same day.
  6. Whip cream and  1/4 cup sugar to medium peaks. To serve, spread whipped cream evenly over cooled cake.
  7. Refrigerate until ready to serve.
