Heart Healthy Low-Fat Chocolate Chip Zucchini Bread


I found this recipe, while looking for a healthy after-school snack, for the beasties. Found here.They had some (culinaraly particular) friends, over, and even they loved it! (This photo is from the original recipe site.)
Heart Healthy Low-Fat Chocolate Chip Zucchini Bread
Ingredients
1 cup All-purpose Flour
1 cup White Whole Wheat Flour
½ cups Brown Sugar, Not Packed
1-⅛ teaspoon Baking Soda
½ teaspoons Salt
½ cups Chocolate Chips
1 whole Large Egg, Beaten
1 teaspoon Vanilla Extract
2 Tablespoons Melted Butter
1 cup Apple Sauce
1-½ cup Shredded Zucchini
Directions
Preheat oven to 325F.

1. Combine flours, sugar, baking soda, and salt in a large bowl. Mix well. Add chocolate chips and gently mix to combine. Set aside.
2. In a medium bowl, mix egg, vanilla, melted butter, apple sauce and zucchini. Add this to the flour mixture and stir until just blended.
3. Pour batter into a large 9X5 inch loaf pan. (I used 4 mini loaves, they came out great, and easy to share!)
4. Bake at 325F for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes. Remove from loaf pan and let it cool before slicing.
