Tomato, Pasta and Artichoke Grill



I found this in an unused vegetarian cookbook. It was so delicious, and I even shared it with my parents, for dinner.

Tomato, Pasta and Artichoke Grill
12 oz pasta
9 oz jar marinated artichoke hearts, drained and chopped
2T olive oil
1 cup thick cream
2T chopped fresh thyme (I used a few sprinkles, of ground)
2 cloves crushed garlic
3/4 grated parmesean
1 2/3 shredded cheddar cheese
2lb tomatoes, sliced thinly

1 Prepare pasta according,to package. In hot pot, return the pasta, all of the other ingredients including half of the parmesean, and 1 1/4c of the cheddar cheese.

2 Grease a 9x12 pan, and spread the pasta mixture into it. Top with the sliced tomatoes and leftover cheese. Briol for 6 minutes or until it gets golden brown.
