Szechuan Cold Sesame Noodles

This is adapted from Amy Cotler's One Pot Vegetarian Dishes (There's no photo, because I forgot, and we ate the whole thing!):

Szechuan Cold Sesame Noodles

1/2c peanut butter
1/2 balsamic vinegar
4T soy sauce
4T Asian sesame oil
2t vegetable oil (if it isn't smoothing out enough)
1t hot chili oil (to taste)
2 minced, garlic cloves
16 oz linguini
2 medium shredded carrots
4 scallions, cut on the diagonal

1) In a large bowl, whisk the peanut butter with 6T hot water, until well blended. Gradually, whisk in the vinegar,soy sauce, sesame oil hot oil, garlic, and vegetable oil, if needed.
2)Cook pasta, according to directions. When cooked, drain in a colander, and rinse with cold water.
3) Add pasta to the sauce, in the bowl, and toss, to coat. Add carrots and onions, and mix in gently. Sprinkle with toasted sesame seeds, if you'd like.

I served these with polynesian chicken kebabs. (Pre-marinated, from Sprouts.)
