I found this recipe in the Moosewood Low Fat Cookbook. (There is saran wrap on it, because I was bringing it to a neighbor's house, for a Pot Luck.)
Spinach Artichoke Dip
5oz fresh spinach, rinsed and stemmed
2 garlic cloves, pressed or minced- i use a lot more
1 1/2 cups cooked butterbeans (or cannellini)
15 oz can 1 cup chopped scallions
2 TBS chopped fresh basil
2-3 TBS fresh lemon juice, to taste
5-6 artichoke hearts or bottoms, minced
salt, pepper to taste
Using the water clinging to the leaves after rinsing, steam the spinach until just wilted 2-3 minutes. drain. In a food proccessor or blender, puree spinach, garlic, beans, scallions, basil and 2 TBS of the lemon juice until very smooth. Fold in minced artichokes and add more lemon salt pepper to taste.
I also added, 1 oz of feta cheese, for a more salty flavor, and served it with sliced cucumbers and pita bread.
