Easy Stuffing

I got this recipe a few years ago, and I've changed it up to suit our tastes.
Easy Stuffing
2 tablespoon oil
medium-size onion, chopped
2 medium-size tart apples, coarsely chopped
3 celery stalks, chopped
3 cups vegetable broth
1 cup dried or fresh cranberries
2 tablespoons margarine
1 package (16-ounce) herb-seasoned stuffing


In 5-quart pot over medium heat, in 2 tablespoons ho oil, cook 1 medium-size onion, chopped, until golden and tender, stirring occasionally. Stir in celery,optional cranberries, and apples, cook over medium heat 5 minutes. Stir in 3 cups broth and 2 tablespoons margarine or butter (1/4 stick); over high heat, heat to boiling.
Remove saucepan from heat; stir in one 16-ounce package herb-seasoned stuffing until well mixed.set aside.
