"Mmmmm! Okra!". Was shouted at my dinner table, last night. I almost fainted. This "recipe" was given, to me, by a friend, after giving me a bunch of okra, fresh from her backyard! My boys love pickled okra, but didn't like fried, so I didn't know what to do with it.
Mmmmmm! Okra!
okra (as much as your family will eat)
1 can of diced tomatoes (I usually use plain, but I had a can of celery, onion, and green pepper yesterday)
2 T olive oil
1 sliced onion
Saute the onion in the olive oil, until translucent/browning. Add sliced okra, and stir frequently for 5 minutes. Dump entire can, into the pan, and stir, until the okra is tender.
