Texas Corn Thing


This was first introduced, to me, by my Girl Scout Leader (and best friend's mom) at Girl Scout Camp, in 6th grade. She couldn't remember the last part of the name. Thus, "Texas Corn Thing". It is a favorite, in our home, is so easy to make, and of course, I make it vegetarian!

Ingredients:
12 oz fake meat (or ground beef or turkey)
1 teaspoon salt
1/8 teaspoon ground black pepper
1 green bell pepper, chopped
1 medium onion, chopped
1 package macaroni and cheese dinner, prepared with milk and margarine as package directs
1 can (12 ounces) whole kernel corn, drained
1 can (6 ounces) tomato paste
Preparation:
Brown fake (or real) ground beef with salt and pepper in a large skillet. Add onion and green pepper; continue cooking until onion is tender. Add corn and tomato paste; heat through. Stir in prepared macaroni and cheese dinner; simmer for 8 to 10 minutes. (I tossed in a can of black beans, the other day, too. the boys requested it!)
EDITED:  I made this in the crockpot.  Don't pre-cook the noodles.  Put them in, dry. Dump everything into the crockpot.  Don't drain the corn can, first.  Then, fill up the corn can 2ce, with milk.  This was done within 5 hours (probably by 4 hours.).
