Empanadas


As a dessert, I made empanadas.

Empanadas

1 package of fillo dough

1 can of pie filling of your choice (or fresh fruit chopped small) and drained

coarse sugar

1 beaten egg


Thaw fillo dough per package instructions.

Roll out on a lightly floured surface.

Using a pizza cutter, cut into 8 pieces (3 cuts short way, one the long way). (Or you can cut into circles using a template, but it all tastes the same...)

Place 1 T of fruit off center, of each rectangle. Sprinkle sugar on top of each fruit, to taste (You can even do a small dollop of sour cream, if you like it creamy.).

Brush egg around the edges, and fold in half.

Press around the edges with a fork, to seal.

Brush with more egg, and sprinkle with sugar. Prick the center with a fork, as vent holes.

Bake at 400F, for 20 minutes or until golden brown.
