French Onion Soup


I got a recipe, for French Onion Soup, from a friend, while living in Norway. However, English was not this friend's first language, and all of the measurements were off, for me! So, I've made my own recipe! It's easy, yummy, and hits the spot!
French Onion Soup
2 onions (halved and sliced)
1 qt broth (Beef tastes best, but tonight I'm trying an organic mushroom*fingers crossed*!)
thyme
olive oil
margarine
splash of red wine
Swiss cheese or Provolone
crusty bread sliced and toasted

In a soup pot, put a thin layer of olive oil and a dollop of butter/margarine. Heat on stove. Toss in the onions, and sautee until translucent, but not brown. Add a few shakes of thyme (or poultry seasoning). Then, pour in enough broth to cover the just to the tops of the onions. Let this simmmer, covered for 5 minutes.

Pour in the rest of the broth, and splash of red wine. If you like it more soupy, you can add more broth or water.
Let sit on stove for as long as you'd like, on low.

Put some soup into a bowl, and add the slice of bread to the top. Add a slice of Swiss cheese. This will melt on it's own with the heat of the soup. If you're feeling fancy, you can set the bowl on a cookie sheet, and put it under the broiler for a bit.
