Here's what's for dinner. When I first made these, Hubby dubbed these, "Sloppy Julies". Nice. Then, he had the boys saying, "Mmmmmm! Sloppy!", as they ate them. Oh well, at least they eat them!
Sloppy Vegetable Sandwiches
(serves 8)
Ingredients
1 cup chopped carrot
1 cup chopped celery
2/3 cup lentil, rinsed & drained
2/3 cup uncooked brown rice
1/2 cup chopped onion
2 garlic cloves, minced
2 tablespoons brown sugar
2 tablespoons mustard
3 1/2 cups vegetable broth
1 (8 ounce) can tomato sauce
1(8 ounce) can tomato paste
2 tablespoons cider vinegar
8 hamburger buns or French rolls
Directions
1)In a 3 1/2, 4, or 5-quart crock pot, combine carrot, celery, dry lentils, uncooked brown rice, onion, garlic, brown sugar, and mustard.
2)Stir in vegetable broth.
3)Cover and cook on low heat for 8 to 10 hours or on high heat for 4 to 5 hours.
4)Stir in tomato sauce, tomato paste and vinegar, cover and cook for 30 more minutes.
5)To serve, spoon mixture onto buns or rolls.

I served this with hash browns fried in olive oil and onion, and fresh green beans with Light Ranch.
