This recipe was adapted to a crock pot. We served this with injera bread, from our local Ethiopian restaurant. Delicious, and makes a TON of lentils! (Pictured with Tibs.)
Yemisir Wot (Berbere Lentils)
Ingredients:
- 1/2 cup coconut oil
- 2 small to medium yellow onions, chopped
- 2 cloves garlic, pureed
- 1 tbsp fresh ginger, peeled and pureed
- 1/4 cup berbere spice (Purchased from my local Ethiopian shop.)
- 1 cup dried red lentils, washed
- 3 cups water
- kosher salt, to taste
- In a Crock Pot add all of the ingredients. Set on LOW for 8 hours. Stir once or twice.
